Mini fruit tart

Approx. 250 calories (6 grams of fat) per serving. Recipe serves 4

Ingredients
  • 4 pre-made pie shells (tart size)
  • 1/2 cup low fat vanilla pudding
  • 1/4 cup apricot jelly
  • 1 cup of each: Blueberries Strawberries (sliced) Raspberries Mandarin Oranges
Directions
  1. Spoon approx. 1/8 cup of pudding into each shell.
  2. Arrange fruit on top of pudding.
  3. Heat apricot jelly until liquified - add 1 Tbs. water if necessary.
  4. Brush the jelly glaze over the top of each tart.
  5. Let cool before serving
