Fruity Stir Fry

Approx. 300 calories (1 gram of fat) per serving Recipe serves 4

Ingredients
  • 2 cups cooked rice
  • 2 cups broccoli florets
  • 2 cups snow peas
  • 1 cup bean sprouts
  • 1 red bell pepper
  • 1 can pineapple chunks (no added sugar), with juice
  • 4 cups fresh strawberries
  • 1 oz Teriyaki sauce
  • 1 clove garlic (finely chopped)
  • 1 tsp. fresh ginger (finely chopped)
  • red pepper flakes, to taste
  • olive oil
Directions
  1. Lightly spray a sauté pan with olive oil.
  2. Sauté the garlic, ginger and red pepper flakes.
  3. Add the red bell pepper.
  4. Add the Teriyaki sauce and pineapple juice and bring to a boil.
  5. Add the snow peas, broccoli, and bean sprouts.
  6. Cook until all the vegetables are tender, not soggy!
  7. Serve with cooked rice.
  8. Garnish with pineapple and strawberries.
