I love Swiss chard when it is in season and bought a huge bunch at the market. This is a quick and simple way to cook the leaves. This made a very large portion - or two small portions.
Ingredients
- 4 oz. chicken breast
- 4 cups Swiss chard leaves
- 1/2 cup onion
- 2 cloves garlic
- 1 tomato
- 2 Tbs balsamic vinegar
- water
- red pepper flakes, to taste
- Wash chard and remove stems (save stems for another recipe).
- Cut chard leaves into bite sized pieces.
- Slice onions and chop tomatoes.
- Add enough water to cover bottom of a skillet.
- Bring to boil and add chicken, pepper flakes, and crushed garlic.
- When chicken is almost cooked through, cut into cubes (you can also do this before cooking).
- Add sliced onions.
- When onions are soft, add chard.
- Once chard is wilted and tender, add tomatoes.
- Cook until tomatoes are warm and start to lose water.
- Add vinegar and mix well.
