While the fish with dill potatoes dish was quite tasty, I still craved potato dill soup. I had lots of dill, so I made a big pot of soup!
Ingredients
- 3 1/2 cups red potatoes
- 1 cup onion
- 1 Tbs butter
- water
- 12 sprigs dill (approx. 1/8th cup)
- salt and pepper, to taste
Directions
- Wash and cube potatoes (I left the skin on).
- Dice onions.
- Add to a pot and cover with water.
- Boil until potatoes are soft.
- Remove from heat and blend (I used an immersion blender and left a few chunks for texture).
- Chop dill and mix in, leaving a little bit to garnish the top.
- Add butter and season to taste with salt and pepper.
