Recipe serves 10 (approx. 6 pieces each)
Ingredients
- 1 lb shrimp
- 1 fresh pineapple
- 1/2 cup pineapple juice
- 1/8 cup pickled ginger slices
- 1/8 cup soy sauce
- toothpicks
Directions
- Mix pineapple juice, 3-4 slices of ginger, and soy sauce.
- Add boiled, peeled, deveined shrimp (50-70 per pound).
- Let shrimp marinate for at least 3 hours.
- Place a toothpick through a shrimp, a small slice of ginger, and a pineapple chunck.
- Anchor each toothpick into the top half of a pineapple.
